I love Pierogies! If you’ve never heard of them, they are a scrumptious Polish dish; pasta circles typically filled with mashed potato. The most common is a mashed potato and cheese mixture; delicious, but I like the potato and onion one (and eliminating dairy always helps too). Once boiled, I usually saute’ with butter and onions, but many like them with other sauces (even spaghetti) or sour cream if your stomach can handle it.

Bourbon & Brown Sugar Glazed Carrots
Sweets aren’t typically the greatest on our diet, but when a little is mixed with something substantial, we can tolerate some at least. These have a BBQ feel, and could easily be served as an appetizer with toothpicks, like the mini hot dogs.

Canned Pear Crisp with Cereal Topping
Nothing fancy here, but for those who don’t know how to make crisps (easiest dessert I know), or want to try it without Oatmeal (even Quaker Oats can’t guarantee theirs is gluten free), here is a quick one using one of the few fruits we can eat…canned Pears (or peaches). Cinnamon and nutmeg added to brown sugar give it a fall feel.

Meatless Chicken-N-Stars Frittata
Made with Pastina, the tiny star pasta, this is easy to eat for anyone. Chicken Soup Base (paste) adds such a rich yellow color and flavor, that I don’t care if it’s all fake. Frittatas are great served room temperature, as well as hot (some even eat cold), so this makes a nice dish to bring to Thanksgiving. Carrots, Onions, Celery, Parsley round out the flavors.
Chicken may be okay for some, but my belly cannot tolerate it.
So this gives the flavor without the meat.

Artichoke Heart Casserole
This, folks, is my answer to a “Green Bean Casserole” type dish…without Green Beans (or corn, neither of which we can digest). It’s comfortable, not too flavorful, creamy, and a compliment, rather than accent to a meal. Artichoke Hearts baked in a mild chicken flavored sauce made with instant Non-Dairy Creamer to add the richness of cream.

Roasted Potato Salad
Roasted Garlic and Roasted Potatoes make this unique (bacon, cheddar, and chives just add flair). If you are looking for a Thanksgiving side dish, this one tastes great at room temperature …and it doesn’t have skins! So many of the recipes recommend red or yellow skinned potatoes, and we can’t eat those. Peel first, bake right along with the garlic, and they hold up just as well; maybe even better.

Gelled Cranberry Jello Mold
OK…I know what you’re probably thinking…a jello mold? Can’t you do better than that? Well, I’ve never seen one with gelled cranberry sauce, and didn’t know if it would work. I love how it turned out. For gastroparesis sufferers, we can’t have the lovely whole cranberries everyone likes to serve (no berries or fruits with skins). So this is something we can enjoy that is a little special and everyone else will like it too.
This one has pineapple and strawberry jello, but you can use any combination you like. The creamy part is either Non-Dairy whipped topping or frozen yogurt. Both work well with jello.

Crustless Pumpkin Pie with Almond Milk
OK, had to include Pumpkin Pie, right? This one is basically just the filling (my favorite part), but you could easily bake it in a crust if desired. Almond Milk (with help from cornstarch) make this much easier on our stomachs, and still tastes great!

Thanksgiving Recipes Begin… Parsley Stuffing
Time to start getting ready for Thanksgiving, for those in the US. I wanted to give you time to try recipes out Before, so will be posting lots for you to choose from.
To me, the most important part of Thanksgiving is the stuffing. I could eat only that, and be perfectly content. Fortunately, my Grandma’s parsley stuffing is already digestible. I really dislike Sage (don’t judge here), and have been spoiled with big chunks of soft bread, so also don’t care for the packaged dry bread crumbs. Needless to say, I have become set in my ways on this one.

Rice Doughnuts
Basically Sweet Rice Balls, but my son thought they were doughnuts, so that’s good enough for me. Lightly sweetened rice with streusel filling gives even Gastroparesis, gluten free and lactose free people something to satisfy a sweet tooth! These are not deep fried, just turned in skillet with a little oil.
