Made with Pastina, the tiny star pasta, this is easy to eat for anyone. Chicken Soup Base (paste) adds such a rich yellow color and flavor, that I don’t care if it’s all fake. Frittatas are great served room temperature, as well as hot (some even eat cold), so this makes a nice dish to bring to Thanksgiving. Carrots, Onions, Celery, Parsley round out the flavors.

Spanish Garlic Soup – Sopa de Ajo
Always glad to find new soups – but one with poached eggs and basic pantry ingredients in 30 minutes? Winner! This is a rustic, traditional Spanish soup when you really have nothing in the cupboard. Paprika, garlic, day old bread, and eggs to add flavor and protein – what more could we ask for? Such a unique flavor…I’d highly recommend.

Breakfast Nachos
Such a simple idea…yet neither I nor my friends thought of it before. Put bacon, eggs, cheese, etc. on top of home made tortilla chips (just tortilla pieces quickly fried), and you have such a nice change of pace for breakfast foods. These chips are good even plain, but they hold up well underneath toppings so these make great finger foods. Chips would be great with dips too. Make with Gluten Free tortillas if desired.

French Toast Casserole with Almond Milk
Finally something for all you sweet lovers! This is just a basic french toast casserole, but using Vanilla Almond Milk instead of milk/cream was trial and error to get the right measurement, so thought I’d post for anyone else. Crunchy on top, fluffy in the center, this makes a hearty breakfast.

India’s Best Kept Secret
This is one of the most exciting finds I’ve had in a while. A whole new world has opened up with a simple flour and water bread from India. Two methods for adding egg to the basic bread are shown here, but this is just a springboard for more ideas. These are my pre-teen son’s new favorite.
Paratha is an old, basic Indian bread made from flour and water…similar to a tortilla, but with heartier flour. Finding all they DO with it has opened up a new door for me, but using their process with white flour has shown new results that are great too, albeit different. A warm meal and/or bread in 30 minutes? Yes, I’ll be playing for a while.

Bacon Pasta Carbonara
If you already make Carbonara, you probably won’t need this recipe; nothing terribly new, other than regular bacon instead of Pancetta. However, if you are looking for a new taste in pasta, and like bacon, garlic, and Parmesan cheese – this is for you. Oh, and did I mention the sauce is made with EGGS?!
Shh – no one will know that the secret to the creaminess (and protein) is not cream!

Breakfast Crunchwraps
Whoever the genius was who created Crunchwraps, I thank you.
These are awesome with any filling; so simple, and great to eat one handed!
I find it easier to prepare all the inside ingredients ahead of time, and make up 6 or so, customized for each person. I’ve got them here with breakfast ingredients, but try these with shaved turkey, avocado, or some tomato veggie mixture…or Pizza Stuffings. They microwave nice (and even toast if you make them skinny enough).

Hash Brown Pizza – Gluten Free
I’ve always thought hash brown crust for a breakfast dish sounded great, but have never been very successful at it. I didn’t realize how good regular old pizza sauce and mozzarella cheese would be! Frozen hash browns mixed with an egg, then add whatever toppings you like. Everyone can have their pieces however they want. I’ve added some tips to make the crust crispy enough to pick up and eat…well…like a pizza.

Single Serving Recipe (can be easily multiplied)
One of my favorite meals has always been creamed hard boiled eggs. So, thinking about this diet centered around eggs, and thought, “Yippee”. Until I tried making it without milk. Adding non-dairy creamer to the water before adding it to the butter did the trick!
This is actually gluten free as well as lactose free, as it uses cornstarch for thickening. You might have to get creative in what you serve it over, but the creamed eggs themselves are gluten free.
